More from this weekend’s trip to the Buford Highway Farmer’s Market. While I don’t usually care for corn tortillas, they were making them fresh – and hot tortillas are too good to pass up. So now I’m stuck with 30 tortillas and had to find something to do with them…
Something simple and fast:
First saute a salmon filet rubbed with salt, black pepper, cumin and cayenne. While the fish cooks, reconstitute some wasabe powder and mix with mayonnaise and bit of lime juice. After the fish is done, let it rest and heat the tortillas in the pan. Flake the fish, spread the tortillas with the wasabe mayonnaise, add a bit of shredded lettuce and more lime juice and you’re done. Less than 10 minutes.
