Mmmmm, good stuff! I just moved back to Atlanta (native) after living up north for over a decade–how things have changed! Food and restaurant-wise, for the better! A posting on dofu ru (fermented salty tofu), one of my favorite condiments with congee or scrambled eggs, definitely signals a sea change! Don’t forget to always use clean utensils with it, too, or it will mold…:)

Indeed it will mold – and (unintentional) homemade chou dofu is far from pleasant…

Please take the time to continue this post for 2010. I have really enjoyed finding the spots you go to and your reviews informational. You seem to be slowing down quite a bit.
